✨ BONUS TIPS:
🍛 You can use any combo of red/yellow/brown lentils) – we used Persian red. You could even use split lentils, which will cook in the half the time with half the amount of liquid, and yield a more daal-like texture.
🍌 If you’re not making both curry & lassi at once, or just eating the bananas as one would, you can freeze the banana flesh and/or peels for another time – the peels will discolour in the freezer but are still ace once thawed. And the frozen flesh is perfect for smoothies or popping through banana bread.
🤦🏻‍♀️ On BB, if you’ve managed to forget to peel bananas before freezing and pull them out blackened for baking, never fear – you can chop them up, skin and all once thawed a little, and use them whole.
🌿 To make either of these fully plant-based, use coconut yoghurt.
