Fig & goat’s cheese quiche with walnut crust & goat’s cheese salad

🌰 The fresher your walnuts, the sweeter and less bitter their flavour. If you can shell on demand, that would be ideal, but any good quality shelled walnuts will do – as will fresh walnut meal.
✨ you can tell how fresh shelled walnuts are by how much they’ve retained their shape. The more nut dust in the bottom of a pack, the more chance the flavour will disappoint.
🥗 If serving the salad sans tart, pop 6 fresh figs, quartered through for extra pizzazz.
🍯 Vincotto is a syrupy Italian vinegar reduction, which is delightful through dressings and lovely over ice cream. If you’re not yet ready to commit, toss the walnuts through a half tablespoon of honey and half tablespoon of balsamic vinegar instead.
💁🏻‍♀️ Alternatively, just pop some fresh walnuts through the salad and call it a day.
