MANGO CARPACCIO WITH GREEN PEPPERCORNS

The thing with super ripe mango is that you really don’t need to do much with it beyond let it run down your arms as you get stuck in. But something magical happens when green peppercorns are added – a phenomenon HB explains in ‘Heston at Home’ as accentuating and emphasising the flavour and aroma that’s also found in the mango’s pip. It really IS a taste-sensation, and very worth giving a whirl while the mango’s still about.
